This is not a fairytale. I learned that quite a few months ago. Naively, we went into this thinking "Oh! We want to have a baby now" and expected that it would happen because we wanted it to. And, for some that does work. Not for me - or many others like me. It's hard. It's emotional. It sometimes gets the best of you. So, after over a year of trying to conceive and a PCOS diagnosis, I find myself here - trying to believe.

Chicken Fajitas

This recipe is near an dear to my heart. My uncle showed me how to make these in my great grandmother's kitchen. They were the closest people to me growing up and they are both gone now. But, memories and their yummy recipes live on!



Uncle Marlon's Chicken Fajitas


1pkg boneless, skinless chicken
1 medium onion, chopped
1 red bell pepper, julienned
butter
hot sauce
Worcestershire sauce
salt
pepper


1. Boil chicken until done. Using two forks, pull the chicken apart into shreds.
2. In a skillet, melt butter at low-medium heat {at least 1/4 cup-you will have to judge the amount, and usually add more later, too} and add onion and peppers.
3. Saute the onions and peppers until onions are caramelized.
4. Add chicken. 
5. Cook on low heat, adding Worcestershire sauce and hot sauce sparingly until desired flavor is reached.


You now have your filling! Grab a flour tortilla and spoon some on, top with gobs and gobs of sour cream. Maybe some rice and refried beans on the side? Yumm!
